Lime Gorgonzola Chicken Melt


  • 6 {Foster Farms chicken thighs, boneless and skinless}

  • 1 cup white wine

  • ½ cup chopped red onion

  • ¼ cup fresh lime juice

  • ½ cup chopped cilantro

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp red pepper flakes

  • ½ tsp cumin

  • 1 cup pine nuts

  • ¾ cup gorgonzola cheese crumbles


  • 1. Preheat oven to 350°F.

    2. In large bowl, combine white wine, red onion, lime juice, cilantro, salt, pepper, red pepper flakes and cumin.

    3. Place chicken in large baking pan. Pour wine mixture over chicken. Place chicken in oven and bake 35 minutes, or until done.

    4. Remove chicken from oven and place on plates or serving platter. Top with pine nuts and cheese crumbles before serving.
