BBQ Chicken on Cauliflower Crust Pizza

Cut the carbs and load up on the delicious protein with this BBQ Chicken Cauliflower Crust pizza. Perfect as a snack or meal!

Ingredients

  • 1 ¼ lbs (~2 ½ breasts), Foster Farms Simply Raised® Free Range Boneless Skinless Chicken Breast Fillets butterflied lengthwise and cut into ½” thick strips

  • 1 tablespoon seasoning salt

  • ½ cup plus ⅔ cups BBQ Sauce (½ cup for chicken, ⅔ for the pizza assembly)

  • 2 cups shredded Mexican cheese blend

  • ½ red onion, sliced thin

  • 2 jalapeno peppers, sliced very thin

  • 1/2 cup fresh pineapple, diced

  • 2 tablespoons fresh cilantro, chopped

  • 2 ready made 9” cauliflower pizza crusts

Directions

  • 1. Preheat the oven to 450 degrees fahrenheit or to the temperature indicated on the packaging of the cauliflower pizza crust.

    2. In a large bowl, toss the chicken breast strips with seasoning salt, pepper and ½ cup BBQ sauce.

    3. Heat 1 teaspoon cooking oil in a large skillet over medium high heat. Add the chicken to the pan and saute for 8 minutes, until the chicken strips are fully cooked and a meat thermometer inserted in the thickest part of the strips reaches an internal temperature of 165 degrees fahrenheit. Set aside.

    4. Ladle ⅓ cup BBQ Sauce onto each cauliflower crust** and top evenly with the cooked chicken, shredded cheese, sliced red onion, jalapenos and pineapple.

    5. Bake pizzas for 12 - 13 minutes or until the crust is golden and the cheese is golden brown and bubbly.

    6. Sprinkle with fresh cilantro to serve.

    **Some cauliflower crusts require pre-cooking before they are ready for toppings. If the crust that you selected requires pre-cooking, prepare it according to the instructions.
