Cilantro Lime Grilled Chicken

Time to get out the BBQ! Chicken breast is marinated with lime, cilantro, honey and garlic, then cooked to perfection on the grill.

Ingredients

  • 1 1/2 lb Foster Farms Simply Raised™ Free Range Thin-Sliced Boneless Skinless Chicken Breast Fillets

  • 4 whole limes; plus the zest of 2 whole limes

  • 1/4 cup oil

  • 1/3 cup cilantro; packed and chopped

  • 1 Tbsp. honey, melted

  • 1 Tbsp. garlic; minced

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper


  • Avocado Salsa Ingredients

  • 1 large avocado or 2 small; cubed

  • 1 roma tomato; seeds removed and diced

  • 1/4 cup red onion; diced

  • 1 tsp. fresh lime juice

  • 1/4 tsp. garlic powder

  • salt and pepper to taste

  • 1-1/2 jalapeno; finely minced (optional for spice)

Directions

  • Marinate Cilantro Lime Chicken
    1. In a medium bowl, whisk together the lime juice, lime zest, oil, cilantro, honey, garlic, salt, and pepper.

    2. Add the chicken to the marinade and massage for a minute with your hands. Add the chicken and the marinade to a large ziplock bag and place in the refrigerator for 30 minutes to 3 hours.

    3. When ready to grill, remove the chicken from the refrigerator and heat a grill on medium high heat if using an indoor grill. Lightly coat the grill with olive oil and grill the chicken on each side for 7-8 minutes. When the chicken is ready, the internal temperature will be 165° F. Make the avocado salsa and spoon onto tops of the grilled chicken.

    4. Add the avocado, tomato, red onion, lime juice and garlic powder in a medium bowl. Add salt and pepper to taste and stir together. Top the avocado salsa on top of the grilled Cilantro Lime Chicken. Serve and enjoy!

    Tips for Making the Best Cilantro Lime Chicken - The longer you let the chicken marinate, the more flavor it will have. - For additional flavor, simmer the left over cilantro lime marinade in the grill pan after the chicken has cooked and it can be served on top of the chicken. The marinade will thicken after a few minutes. - If using chicken breasts, slice them in half or pound them so they are tender and have a quicker grill time. - Any chicken will work for this recipe - the time will differ depending on the type of chicken used.
