For the Peach Dressing:
1 pound California peaches, seeded and quartered
1 clove garlic
¼ cup white wine vinegar
¼ cup olive oil
¼ teaspoon kosher salt, adjust to taste
black pepper to taste
For the Wraps:
1 cup cooked quinoa
2 tablespoons finely chopped green onions
½ cup chopped fresh basil
⅛ teaspoon kosher salt
½ pound California peaches, thinly sliced
¼ cup crumbled feta cheese
4 | 10-inch whole wheat or gluten-free wraps, warmed
