Chicken Curried Mango Aram Rolls

Filled with juicy chicken, succulent mango, zesty lemon, and a Thai chili kick. This meal or snack that will satisfy all your cravings.

Ingredients

  • 1 20 oz bag of Foster Farms Chicken Breast Grilled Strips

  • 8 oz. soft cream cheese

  • ¼ cup mango chutney

  • 2 tbsp thai chili sauce

  • 2 tbsp lemon juice

  • ¾ cup small diced celery

  • 1 bunch green onion – rinsed, trimmed and small chop

  • 1 bunch cilantro – rinsed, picked leaves, chopped

  • 1½ tbsp curry powder

  • 3 sheets large square Aram Cracker bread If it’s not the soft type, soften with clean, damp towel for 8–10 minutes before using.

Directions

  • 1. Blend cream cheese, mango chutney, thai chili sauce, lemon juice and curry powder in food processor until semi-smooth; set aside.

    2. Soften cracker with damp towel and keep covered to stay soft.

    3. Rinse and trim green onions and chopped cilantro.

    4. Lay out a sheet of the soft cracker bread.

    5. Spread a thin layer of soft cream cheese mix all over the cracker bread.

    6. Lay a row of chopped chicken strips at one end of the cracker bread. Lightly press the chicken into the cream cheese mix and then sprinkle a portion of the chopped cilantro, diced celery and chopped green onions over the rest of the bread.

    7. Roll the bread tightly, but not too tight as to break the bread.

    8. Wrap the roll in moist paper towel and wrap that in cling film.

    9. Repeat process with the rest of the ingredients.

    10. Store refrigerated until ready to serve. It’s best to let the rolls rest and cool for at least 20 minutes. Unwrap and cut 1/2 to 3/4 inch slices for hors d’oeuvres or 6” cuts for sandwich size.
