Directions
In a small bowl mix spices together to make a rub.
Brush chicken breasts with about 2 teaspoons of olive oil.
Rub a little more than half of the spice mixture on chicken. Save the rest for the veggies.
Place chicken breasts on a preheated grill. About 7-9 minutes per side with the lid open. The internal temperature of the center of the thickest piece of chicken should reach 165°F. Always use a meat thermometer to determine the temperature.
Meanwhile season your veggies and sauté in a large, preheated skillet with about 2 teaspoons of olive oil until onions look translucent.
Pull chicken off the grill and warm tortillas on the grill, about 1 minute on each side.
Slice chicken breasts into short strips.
Assemble your fajitas on warm tortilla with chicken, sour cream, avocados, and veggies.
