Ingredients

  • Chicken:

  • 4 Foster Farms Chicken Leg Quarters

  • 2/3 cup ketchup

  • 2/3 cup honey

  • 1/2 cup olive oil

  • 1/2 cup soy sauce

  • 2 large limes, both juice and zest

  • 2 large oranges, juice only

  • 5 garlic cloves chopped

  • 2 t ground cumin

  • 2 t paprika

  • 2 t chili powder

  • 1/2 t cayenne pepper (optional for added heat)

Directions

  • 1) In a gallon size plastic zipper bag thoroughly mix all sauce ingredients. Strain 1 cup of the liquid (roughly half) into a small saucepan.

    2) To the remaining marinade add chicken quarters, squeeze out as much air as possible and massage marinade into the meat. Marinate chicken at room temperature for 30 minutes, or alternatively in the refrigerator for several hours.

    3) Preheat a covered propane or charcoal grill, allowing space for indirect heat. Oil the grill. Remove pieces from the bag, sprinkle with salt and pepper, and place them skin-side down on the grill away from direct flames. Discard the marinade remaining in the bag.

    4) Turn the pieces every 10-15 minutes and continue cooking until an internal temperature of 175 degrees has been reached. While the chicken is cooking, bring the reserved marinade to a boil over medium high heat.

    5) Turn down the heat and continue simmering uncovered for about 10 minutes, until the sauce has thickened and will coat a spoon. When the chicken is nearly done repeatedly baste each side of the pieces with the sauce, turning more frequently until they are nicely glazed. As you’re basting you can allow the internal temperature to reach 185 or even 195. You will still have moist delicious meat.

    6) Serve with grilled vegetables, rice and black beans, or a nice salad
