Pineapple Hoisin Chicken Sliders with Broccoli Slaw

These sliders are the perfect dish to make for the family, bring to a party, or enjoy on your own. Sweet, savory, and delicious.

Ingredients

  • Sliders:

  • 12 small Hawaiian slider rolls (Clam shell cut)

  • 1¼ pounds Foster Farms Free Range Simply Raised Chicken Breast Fillets (cut into cubes)

  • ½ cup small, diced pineapple

  • ¼ cup pineapple juice

  • 3 tbsp honey

  • ½ cup Hoisin sauce

  • ¼ cup lemon juice


  • Asian Broccoli Slaw:

  • 2 bunches of fresh broccoli with stems

  • 1 large carrot rinsed, peeled, trimmed and shredded

  • ½ cup shredded red cabbage

  • ¼ cup julienne red onion


  • Dressing:

  • ¼ cup low sodium Tamari or Soy sauce

  • ¼ cup Ponzu sauce

  • 2 tbsp thai chili sauce

  • 2 tbsp thai minced green onion

  • 1 tbsp thai fresh minced ginger

  • 1 tbsp brown sugar

  • ½ tsp garlic powder

  • 2 tbsp vegetable oil

  • ½ tsp sesame oil

Directions

  • Sliders:
    1. Sauté chicken in a medium saucepan over medium heat for about 20 minutes or until internal temperature reaches at least 165°F.
    2. Mix these ingredients together (other than the roll). Set aside.

    Asian Broccoli Slaw:
    1. Rinse and trim off broccoli flower tops and chop small. Trim and peel outer skin of the broccoli stems and shred with mandolin or food processor.
    2. Toss these ingredients together, cover and set aside in refrigerator.

    Putting It Together:
    1. Mix these ingredients thoroughly. Store and refrigerate until ready to toss with broccoli slaw. Dressing will hold for 4 to 5 days.
    2. Place 2 tbsp chicken mix on roll, and top with a small portion of the slaw.
