1 pound fresh Washington grown Brussels sprouts
2 tbsp olive oil
3 ounces paper-thin slices pancetta, coarsely chopped
¾ tsp salt, divided
½ tsp fresh ground pepper, divided
2 cloves garlic, minced

1 tsp fresh thyme, removed from stems
