½ Yellow Onion – Diced, Divided

½ Red Bell Pepper – Diced

4 Eggs – Beaten

¼ Cup Monterey Jack – Shredded

¼ Cup Cheddar Cheese - Shredded

Directions
- 1. Heat Take Out Al Pastor Diced Chicken according to package instructions.
2. Dice yellow onions, red onions, and cilantro. Stir fry on medium heat until onions are slightly translucent.
3. Add in your eggs, stirring constantly until half way cooked. Add your diced chicken and cheese. Stir and leave to set fully for a minute.
5. Plate and top with desired amount of onions and salsa.
