  • • 1 lb of Foster Farms Free Range Boneless Skinless Chicken Thigh Fillets
  • • 2-3 Tbsp of Soy Sauce
  • • 1-2 Tbsp of Chinese Cooking Wine (Xiaoshing Wine)
  • • 3 Cloves of Minced Garlic, About 1-2 Tbsp
  • • 1-2 Tbsp of Grated Ginger
  • • 1 Egg
  • • 2 Cups of Tapioca or Potato Starch
  • • 1 Tbsp of 5 Spice Powder
  • • 3-4 Sprigs of Fried Basil

Seasoning Mix

    • • 1 Tsp White Pepper
    • • 1/2 Tsp of Chili Powder
    • • 1 Tsp Five-Spice Powder
    • • ½ Tsp Garlic Powder
    • • ¼ Tsp Salt
    • • ¼ Tsp Sugar

Directions

Cut chicken thighs into 1-2 inch pieces.

Marinate chicken in Chinese cooking wine, soy sauce, garlic, ginger, and egg for 1 hour to overnight in the fridge.

Combine your seasonings: white pepper, chili powder, five spice powder, garlic powder, salt, and sugar in a large bowl and set aside.

In a separate large bowl combine starch and 1 tbsp of five spice powder.

Heat oil to 350ºF on medium high heat in a large pot.

Take chicken directly from the marinade and toss in the dry mixture. You can press the dry mixture on to ensure it adheres.

Fry chicken in the oil for 3-5 minutes until the internal temperature reaches 165ºF.

Once all chicken is finished frying, toss basil and fried chicken into your large bowl of seasoning and toss.

COOK CHICKEN TO A SAFE INTERNAL TEMPERATURE OF AT LEAST 165°F.
