Ingredients

Chicken

2 lbs Foster Farms Free Range Simply Raised® Boneless Skinless Chicken Breast Fillets

2 tbsp honey
-
¼ cup avocado oil
-
1 tbsp minced garlic
-
½ lime juiced
-
2 chipotle peppers in adobo sauce + 2 tbsp of its sauce
-
1 tsp salt
-
½ tsp black pepper
-
½ cup chopped fresh cilantro
-
1 ½ tsp ground cumin
-
1 tsp chili powder
-
1 tsp paprika
-
1 tsp onion powder
-

Pineapple Salsa
-
1 lb pineapple wedges cubed small
-
1 cubed small red onion
-
1 finely diced jalapeño pepper
-
½ cup fresh chopped cilantro
-
Juice of one lime
-
Salt to taste

Additional Ingredients

Tostadas
-
Avocado (mashed + slices)

Jalapeño
-
Fresh cilantro

Lime

Chipotle Mayo (optional)

Directions
- Chicken:
1) Finely dice/cube chicken
2) Season with chopped fresh cilantro, cumin, chili powder, paprika, and onion powder. Set aside.
3) In a food processor combine honey, oil, garlic, lime juice, chipotle peppers and its sauce, salt and black pepper. Blend until smooth.
4) Add to chicken and mix well.
5) In a hot pan, cook chicken until all the excess liquid has reduced down and chicken becomes golden. Cook until meat thermometer reaches an internal temperature of 165°F.
Pineapple Salsa:
1) Combine all ingredients, mix and set aside.
Assembly:
1) Spread mashed avocado onto each tostada
2) Top with chipotle chicken
3) Add pineapple salsa and chipotle mayo
4) Garnish with avocado slices + jalapeño slices
