Grilled Margarita Chicken

Ingredients

  • 4 Foster Farms Simply Raised™ Free Range Boneless Skinless Chicken Breasts

  • 4 cloves garlic, minced

  • 1 teaspoon ground chipotle chili pepper

  • 3/4 teaspoon ground coriander

  • 1 teaspoon dried oregano

  • 1 1/2 teaspoons salt (to taste)

  • 1/2 teaspoon freshly ground black pepper

  • 3 tablespoons olive oil

  • 3 tablespoons tequila

  • 2 teaspoons honey

  • 1 tablespoon lime zest, from about 2 limes

Directions

  • 1. Combine all of the ingredients except for the chicken breasts in a quart or 1 gallon bag and squish ingredients together to get a good mix.

    2. Add the chicken breasts and rub the marinade into the meat until it is evenly coated. Seal the bag and place it in a container so it protects against possible leakage. You will want to marinate for at least 4 hours to get that flavor soaked in.

    3. Preheat your grill on high and grease up the grates with non stick, non flammable cooking spray or with a paper towel and some olive oil.

    4. place the chicken breasts on the grill and pour any additional marinade from the bag over the top. Close the cover and grill the chicken breast for 2-3 minutes then flip and cook an additional 2-3 minutes on the opposite side. You'll get those lovely grill marks and delicious, juicy chicken in no time!
