Rubs are a form of dry marinade. Mixtures of spices are hand-rubbed directly onto the chicken and then allowed to set from 20 minutes to overnight in the refrigerator before putting the chicken on the grill. Experiment with varying mixtures to find flavors that please you.
Some of our favorite rubs:
- Hot and Spicy Rub: 1 1/2 teaspoons chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic salt and 1/4 teaspoon cayenne pepper.
- Spicy Mediterranean Rub: 1 tablespoon ground cumin, 1 teaspoon paprika, 1 teaspoon pepper, and 1/2 teaspoon cayenne pepper.
- Indian Ginger Rub: 1 teaspoon cardamom, 1 teaspoon ground ginger, 1/2 teaspoon nutmeg, 1/2 teaspoon garlic salt, and 1/2 teaspoon pepper.
