Directions

1. In a large pot, heat oil and then add onions and garlic. Sauté 3 to 5 minutes.

2. Add remaining ingredients.

3. Bring soup to a boil.

4. Reduce to simmer and cook covered for 15 minutes.

5. Serve with a generous topping of grated Parmesan cheese.

Makes 4 entree-size servings.
