|14 oz||Foster Farms Sauté Ready Fajita Marinated Raw Chicken Breast Strips|
|1 tbsp||olive oil|
|1||small red onion, thinly sliced|
|2 cups||of mixed sliced peppers (I used red, yellow and orange bell peppers as well as a poblano pepper)|
|2 tsp||lime juice|
|•||Salt and pepper|
|1 cup||shredded Monterey Jack or cheddar cheese|
|4||sandwich rolls, cut in half lengthwise|
|¼ cup||chopped cilantro (optional)|
|•||Lime wedges for serving (optional)|
1. Pour the olive oil into a large pan and place it over medium-high heat. Add the onions and peppers and season with salt and pepper to taste. Cook for 3 to 5 minutes or until vegetables have started to soften
2. Add the chicken to the pan and cook, stirring frequently, until the internal temperature of the chicken reaches 165°F. Stir in the lime juice.
3. Preheat the broiler. Divide the chicken and pepper mixture evenly over the rolls and top each sandwich with ¼ cup cheese. Place on a baking sheet and broil for 3 to 5 minutes or until cheese is melted. Top with chopped cilantro if desired and serve immediately with lime wedges on the side if desired.
