Southwest Salad
. Prep Time: approx.  15 Minutes. Cook Time: approx. Minutes. Ready in: approx. minutes .
Makes 4 servings.

1/4 cup lime juice
2 tbsp olive oil
2 tbsp chopped cilantro
1 tsp chili powder
1/2 teaspoon ground cumin
4 cups shredded romaine lettuce
18 oz Foster Farms Roasted Breast Chunks
8 oz black beans, drained and rinsed
6 oz Mexican style corn
1/2  avocado, diced
1/2  small red onion, sliced into rings
1  large tomato, chopped
1/2 cup grated Mexican style cheese
6 oz tortilla chips

In a covered jar, mix the lime juice, olive oil, cilantro, chili powder, and cumin. Cover, and shake until well blended. <br/><br/> Place Chicken Chunks in microwave safe bowl and heat 4-5 minutes. <br/><br/> Place the lettuce in a large bowl. Toss with the chicken, black beans, corn, avocado, onion, and tomato. Just before serving, toss with the dressing mixture and cheese. Serve with tortilla chips, either crushed over the top of the salad, or on the side.
