Chicken and Green Chile Enchiladas

2 10oz cans enchilada sauce
2  Foster Farms Rotisserie Breast Fillets, thawed and diced
1/2 cup chopped onion
1 1/2 cups shredded Monterey Jack cheese
1 cup sour cream
1 4.5oz can chopped green chiles
8 8-in flour tortillas
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Spray bottom of 9x13 inch glass baking dish with cooking spray. Spread ½ cup enchilada sauce in the bottom of the dish. In a medium bowl, stir together chicken, onion, Monterey jack cheese, sour cream and chiles. <br/><br/> Spoon about 1/3 cup chicken mixture onto each tortilla. Roll up tortillas and arrange, seam sides down, in baking dish. Top enchiladas with remaining enchilada sauce and cheddar cheese. Top with foil and bake for 35 minutes. Remove foil and bake 5 minutes longer, or until cheese is melted.
