Foster Farms Recipe by Chef Mark Tadros

INGREDIENTS

1 package Foster Farms Thin Sliced Chicken Breast

1 tablespoon vegetable oil

1 6oz bag baby spinach (cleaned)

2 cloves garlic (minced)

2  portabella mushrooms (cleaned and thinly sliced)

1 8oz jar roasted red bell peppers

4 tablespoons Parmesan Cheese (shredded)

DIRECTIONS

1. Pre-Heat oven to 375o F.

2. Heat oil and sauté spinach, garlic and mushrooms in a large sauté pan, drain juice and chill.

3. Lay thin sliced breasts flat on a clean surface and place two pieces of roasted red pepper, 1/4 cup of cooked spinach and mushroom mixture and 1 Tbsp. parmesan cheese on each breast. Roll chicken keeping stuffing on the inside and place seam side down in an oven safe pan.

4. Cook in oven for about 30 minutes or until the internal temperature of the chicken and stuffing reaches 165 degrees F.
